Shrimp Scampi

Not only is shrimp scampi delicious, but it's also incredibly easy to make. It only takes a few minutes to prepare and cook, making it a great option for a quick and tasty weeknight dinner.

Ingredients

  • 1 pound large shrimp peeled and deveined
  • ¼ cup butter
  • ¼ cup olive oil
  • 4 cloves garlic minced
  • ¼ cup white wine
  • ¼ cup chicken broth
  • ¼ cup lemon juice
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon red pepper flakes

Instructions

  • First, heat the butter and olive oil in a large sauté pan over medium heat. Add the garlic and sauté for a minute or two, until it is fragrant and starting to turn golden.
  • Next, add the shrimp to the pan and cook for about 2 minutes, until they are pink and just starting to curl. Add the white wine, chicken broth, lemon juice, parsley, and red pepper flakes, and stir to combine.
  • Bring the mixture to a simmer and cook for another 2-3 minutes, until the shrimp are cooked through and the sauce has thickened slightly.
  • When the shrimp scampi is ready, serve it hot over a bed of pasta, rice, or mashed potatoes. It's also delicious served with a simple green salad or some steamed vegetables.
