Southern Peanut Butter Cake
Mmmmmm a simple classic for any Southern Potluck…. Peanut Butter Cake with Peanut Butter Frosting! I really hope that no one has any peanut allergies, and if you do I am very sorry!! Because this cake is made with rich creamy peanut-butter, the frosting has even more, and then you garnish with extra whole or crushed peanuts. Either way, it’s a WIN WIN for my mouth.
If you like peanut butter then I am sure you will love this Old-Fashioned sheet cake. Adding peanut butter to your cake adds a more moist and pillowy texture. The flavor is Devine! What sells this cake for me, is the hot gooey frosting that melts in your mouth. The frosting is cooked in a saucepan and you literally pour it over the warm cake. This frosting sets up immediately, so you will have to work quickly. Once you have it poured all over the cake, then sprinkle whole or crushed peanuts over the cake for a garnish. Sometimes, I might have extra frosting (if I don’t spoon it all into my mouth at one time..) then I like to top some graham crackers with this frosting and sprinkle chocolate chips!!!! Yes…. I just gave you another quick simple dessert idea… LOL
Making this cake from scratch was easy, you basically have all the ingredients that you need in your pantry. The only extra ingredient that you might need to buy is buttermilk.
Southern Peanut Butter Cake
Ingredients
Cake
- 2 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 stick butter
- 1 cup water
- ¾ cup creamy peanut butter
- ½ cup vegetable oil
- 2 eggs room temperature
- ½ cup buttermilk room temperature
- 2 tsp vanilla
Frosting
- 1 stick butter
- ½ cup creamy peanut butter
- 6 tbsp buttermilk you can add more if you need
- 2 tsp vanilla
- 3-4 cups confectioner's sugar
Instructions
Cake
- Preheat oven to 350°.
- Prepare a 9×13 pan with either spray or parchment paper.
- Whisk together the flour, sugar, baking soda and salt in a large bowl.
- Heat the butter and water in a medium saucepan until it comes to a boil. Remove from heat and whisk in peanut butter and oil. Let that cool for 5 minutes, then whisk in the eggs, buttermilk, and vanilla until well blended.
- Pour the melted mixture into the dry ingredients, stir to combine.
- Pour into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Set cake on a cooling rack while you make the frosting.
Frosting
- Place butter, peanut butter and buttermilk into a saucepan and bring to a boil.
- Take off heat and stir in the vanilla & powder sugar, one cup at a time. Place back onto heat to warm the frosting before pouring it all over the cake. If it's not pourable then add a little more buttermilk to thin out frosting.
- This frosting sets up fast, so pour hot frosting over the warm cake and spread evenly.
- Top with more peanuts!
