The Ultimate Rice Krispie Treat Recipe

Rice crispy treats are my go-to recipe when I want something sweet to eat. I made my first Rice Krispie Treat recipe when I was very young and has been a lifelong favorite treat!

When I was a teenager, a friend’s mother introduced me to chocolate/butterscotch rice crispy treats. They rocked my world. So delicious! I’m sharing that recipe here.

History of the Rice Krispie Treat

The first recipe for Rice Krispie Treats originated in 1932 by Mildred Day. Instead of the name Rice Krispie Treats, the name was Rice Krispie Bars. The ingredients included vinegar, molasses, and corn syrup instead of marshmallows. The recipe called for the corn syrup and molasses to come to 244ºF with a candy thermometer. This recipe was not the easiest to replicate.

In 1939, the Kellogg Company’s home economics department modified the recipe. They replaced the vinegar, molasses, and corn syrup with marshmallows. The Kellogg Company printed the marshmallow version on its Rice Krispie cereal boxes in 1940.

How to Make Rice Krispie Treats

For homemade rice crispy treats, any crispy rice cereal works for the cereal in the recipe. It doesn’t matter if you use large or small marshmallows. Both sizes give the same result.

Ingredients for the Rice Crispy Treat Recipe

  • Crispy rice cereal
  • Butter
  • Marshmallows
  • Microwavable bowl
  • Spatula
  • 9×9 inch pan
  • Non-stick cooking spray

Ingredients for Chocolate/Butterscotch Topping

  • Semi-sweet chocolate morsels
  • Butterscotch morsels
  • Microwavable bowl
  • Spatula

Instructions for Making Rice Krispie Treats

Place 1/4 cup of butter in a microwavable bowl. Microwave for 30-second intervals until fully melted. Stir in 6 cups of marshmallows, covering all marshmallows with butter. (I use a whole bag. We like our treats with lots of marshmallows.) Microwave for 30-second intervals, stirring between each interval until marshmallows melt.

Fold in 6 cups of crispy rice cereal. Mix thoroughly. Press into a 9×9 inch greased pan.

Instructions for for Chocolate/Butterscotch Topping

In a microwavable-safe bowl, combine 1/2 cup of semi-sweet chocolate morsels and 1/2 cup butterscotch morsels. Microwave for 30-second intervals, stirring between each interval until the mixture completely melts. Spread the mixture evenly over the rice crispy treats and allow to cool. To speed up the cooling process, place the treats in the refrigerator.
