Lemon Chicken With Prosciutto

Ingredients

  • 4 boneless skinless chicken breasts
  • 8 slices prosciutto
  • 2 lemons
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh basil
  • 4 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Start by preheating your oven to 400 degrees Fahrenheit. While the oven is heating up, season the chicken breasts with salt and pepper on both sides.
  • Next, heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken breasts to the skillet and cook them for 3-4 minutes on each side, or until they are golden brown.
  • While the chicken is cooking, thinly slice the lemons and set them aside. Once the chicken is cooked, arrange the lemon slices over the top of the chicken breasts in a single layer.
  • Next, lay the prosciutto slices over the top of the lemon slices, making sure to cover the chicken completely. Sprinkle the chopped parsley, basil, and garlic over the top of the prosciutto.
  • Transfer the skillet to the preheated oven and bake the dish for 10-12 minutes, or until the prosciutto is crispy and the chicken is cooked through.
  • When the dish is finished, let it cool for a few minutes before serving.

Notes

Lemon chicken with prosciutto is delicious when served with a side of steamed vegetables or a simple green salad. You can also serve it with a side of your favorite pasta or rice dish.
