Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup bread crumbs
  • Olive oil
  • 1 cup tomato sauce
  • 1 cup mozzarella cheese grated
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 375 degrees Fahrenheit.
  • Season the chicken breasts with salt and pepper on both sides.
  • Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, place the beaten eggs. In the third dish, place the bread crumbs.
  • Coat each chicken breast in flour, shaking off any excess. Then dip the chicken in the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the bread crumbs, pressing gently to help them adhere.
  • Heat a large skillet over medium heat and add enough olive oil to lightly coat the bottom of the pan. When the oil is hot, add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Transfer the chicken to a baking dish and top with the tomato sauce. Sprinkle the mozzarella cheese over the top.
  • Bake the chicken in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
