Southern Peanut Butter Cake
An easy to make peanut butter cake from scratch with a peanut butter frosting.

Cake
- 2 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 stick butter
- 1 cup water
- ¾ cup creamy peanut butter
- ½ cup vegetable oil
- 2 eggs room temperature
- ½ cup buttermilk room temperature
- 2 tsp vanilla
Frosting
- 1 stick butter
- ½ cup creamy peanut butter
- 6 tbsp buttermilk you can add more if you need
- 2 tsp vanilla
- 3-4 cups confectioner's sugar
Cake
Preheat oven to 350°.
Prepare a 9x13 pan with either spray or parchment paper.
Whisk together the flour, sugar, baking soda and salt in a large bowl.
Heat the butter and water in a medium saucepan until it comes to a boil. Remove from heat and whisk in peanut butter and oil. Let that cool for 5 minutes, then whisk in the eggs, buttermilk, and vanilla until well blended.
Pour the melted mixture into the dry ingredients, stir to combine.
Pour into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Set cake on a cooling rack while you make the frosting.
Frosting
Place butter, peanut butter and buttermilk into a saucepan and bring to a boil.
Take off heat and stir in the vanilla & powder sugar, one cup at a time. Place back onto heat to warm the frosting before pouring it all over the cake. If it's not pourable then add a little more buttermilk to thin out frosting.
This frosting sets up fast, so pour hot frosting over the warm cake and spread evenly.
