Southern Peanut Butter Cake

An easy to make peanut butter cake from scratch with a peanut butter frosting.

Ingredients

Cake

  • 2 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 stick butter
  • 1 cup water
  • ¾ cup creamy peanut butter
  • ½ cup vegetable oil
  • 2 eggs room temperature
  • ½ cup buttermilk room temperature
  • 2 tsp vanilla

Frosting

  • 1 stick butter
  • ½ cup creamy peanut butter
  • 6 tbsp buttermilk you can add more if you need
  • 2 tsp vanilla
  • 3-4 cups confectioner's sugar

Instructions

Cake

  • Preheat oven to 350°.
  • Prepare a 9x13 pan with either spray or parchment paper.
  • Whisk together the flour, sugar, baking soda and salt in a large bowl.
  • Heat the butter and water in a medium saucepan until it comes to a boil. Remove from heat and whisk in peanut butter and oil. Let that cool for 5 minutes, then whisk in the eggs, buttermilk, and vanilla until well blended.
  • Pour the melted mixture into the dry ingredients, stir to combine.
  • Pour into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Set cake on a cooling rack while you make the frosting.

Frosting

  • Place butter, peanut butter and buttermilk into a saucepan and bring to a boil.
  • Take off heat and stir in the vanilla & powder sugar, one cup at a time. Place back onto heat to warm the frosting before pouring it all over the cake. If it's not pourable then add a little more buttermilk to thin out frosting.
  • This frosting sets up fast, so pour hot frosting over the warm cake and spread evenly.
  • Top with more peanuts!
