Cookie Butter Brown Butter Rice Krispies
MMMMMM you will not want to eat any old regular rice krispy treat after you try this!! Believe me, it’s like my own personal crack, I just can’t stop eating this. If anyone has ever had the Trader Joe’s Cookie Butter, you know you can just eat it out of the jar. One day I thought…… Why not combine my two favorite things? Sooooo you’re either going to Love Me or Hate Me for sharing this. Love me because I’m sharing the most delicious concoction for rice krispies, or Hate me because you will not be able to stop eating these!
In order to get these perfect, you do have to brown the butter. If you have never browned butter before I need to tell you that it does take time. So have patience! It can take anywhere from 10-20 minutes depending on your stovetop. The butter will go through 4 stages. At first it will start to bubble, then it will boil. After it boils the 3rd stage is foam. After it foams then it will turn brown, just make sure it doesn’t burn. Nothing tastes worse then burnt butter! Believe me, I know all too well. My recommendation is to constantly whisk the butter the entire time while you are browning it until you reach the final stage, it will turn brown and have a nutty aroma. Once it turns brown and smells nutty, take it immediately off the heat.
Then you will transfer the brown butter into a bigger pot and make sure you scrape all the brown bits off the pan, that is where all the flavor is. Add the bag of mini marshmallows and melt. Once it’s all melted combine the cookie butter and mix until melted. Yes it will look more brown, but that’s what you want. Then add the rice krispies and sprinkle with sea salt. Stir till well combined then place onto a coated pan. I usually wait an hour and then I top off the rice krispies with a layer of Cookie Butter…….PERFECTION!!
